My name is Charlotte, born (1986) & raised in a small village in the northern part of Belgium. As a kid I played all summer on the beach, walked with my fluffy bunny in a doll carriage and thought I had the world's best vocals.
At the age of ten, I was a fulltime sales manager of my handmade sand pastries; self picked flowers and handy crafts. Oh, and I fell in love - many times. My biggest love affair was the smell of my mom’s freshly baked vanilla cake, or was it the homemade cinnamon cookies? Anyway, I already knew in my younger years that once I would grow up, I'd be a pastry chef. A real one!
After graduating in Arts at secondary school, I was focused on studying social work and helping people with a disability. With two bachelor degrees in my backpocket, I moved to Amsterdam (NL) in 2010 where door were opened to a new world. I rediscovered my passion; baking was more on my mind than ever before.
In 2011, I decided to go back to school to get my pastry & chocolate degree. I braved the perils of burning sugar, over whipped egg whites and melting fondant to learn making macarons, croissants, tarte tatin, etc. After graduating, one of my lifelong dreams came true when I started working full time in a beautiful little pastry shop in the city centre of Amsterdam. At the same time my curiosity about fine chocolates, bonbons, etc. evolved into a professional passion. One year later I took a professional Valrhona masterclass.
I’m constantly expanding my horizon, filling myself with inspirations and ideas. I’m experimenting and trying new ideas. My creativity is charged by everything around me: books, pastry chefs I admire and of course restaurants and pastry shops I visit all over the world.
In the last seven years, I have been living my dream and enjoying every single moment of it.
Just as a house cannot be built without a good foundation, a recipe cannot yield a good result without some essential components. Time, passion and the right ingredients are the key to any delicious bakery experience. Working with origin chocolates, fresh (and if possible local) herbs, spices, nuts and fruits add value to the result and brings you an exciting taste sensation.
